Ok so the rest of the post. I made these gf pop tarts for the 12 year old. I try not to buy pop tarts in general but both hubby and older daughter love them. So when they are on clearance I will buy them.
Nutella has no corn syrup so a great chocolate spread.
Recipe
1/2 cup coconut flour
1/2 cup rice flour
1/2 cup almond flour
1/2 tsp xantham gum
1/4 tsp salt
3/4 cup sugar but could be a little less
1 stick melted unsealed butter
1tsp vanilla
1/2 c coconut milk. Room temp
Mix flour and sift together, then sugar and swift. Make a well and add wet ingredients.
Mix together, the squish together by hand. Use parent paper and rolling pin to thinness of about a penny. Then slice 4 x3 inches. Spread tbs of Nutella on one side. Match up with another rectangle. Pinch sides down gently with fingers then with a fork for crimping. Bake at 350 for 7 min then rotate pan. Then about 8-9 min until slightly golden brown. Let cool for 10 min.
I think they taste way better than pop tarts. The dough is def sweeter than a pop tart.
12 year old loved these. We will be making again for early morning b- fast on the run.

Gluten free Nutella Pop tart
Well, I am rededicating myself to writing again. So much has happened in the past few years it may take a lifetime to catch up. So instead of back tracking I will just move forward.
Today's post is about Gluten Free Pop Tarts.
My 12 yr old has terrible exczema on her hands. She was tested for food allergies and environmental allergies. The bloodwork came back positive for gluten and corn. She does not have celiac though. She started sublingual drops for food and grasses. I personally think the grasses are the culprit. She has been a real trooper and not done gluten or corn but still has problems with her hands.
It is amazing to see how many products contain corn syrup. I have been trying to wean our whole family off of gluten. My 14 year old laments daily the agony of gluten free. Blah blah blah.

It has been awhile
Boy, it really has been awhile since I posted. Life is great! What fun we had this summer waiting to find out what a mysterious plant was in our garden. Well it turned out to be pumpkins. The girls were very excited to pick their own pumpkins out of their own yard this year. But of course they still wanted to do our family tradition of going to Shaw Farms. So next year my mom suggested White pumpkins. I look forward to more blackberries. Miranda I think has learned the most from having a garden. She watered the garden all summer and really reaped the Harvest so to speak.

Cupcakes
Ok Don't get me wrong I love cupcakes. But really $3.00 is quite a bit or should I say Bite. You are not paying for the experience. You are paying for the variety. The girls and I tried a new cupcakery in town today. It looks fab. But I wasn't thinking thank goodness I paid $3.00 because that was the best cupcake ever. NO I was thinking OMG I just spent $9.00 on three cupcakes that I could have made. AAHHHHHHHHHHH. We won't be back. I can spend $9.00 at the Bonbonerie and will not blink an eye. I know everything there ROCKS. So what if a cupcake is all Organic. I want the WOW factor for $3.00. We are not in Chicago or New York. This is Milford. Thank goodness this is my blog so I can rant.

Canadian Cheese Soup
Not sure why this is Candadian but the interesting ingredient was Hash Browns. Which of course made this so easy to make. I also added frozen green beans to punch up the veggie factor. Plus white pepper. Took my last Prednisone for my herniated disc. The last two days have been terrible with shakes. Withdrawal symptoms I am sure. Kind of that low blood sugar feeling but I know I was not hungry. Fun Fun Fun.
As far as housekeeping goes, it helps if the Washing Machine works. My loving husband - who is strong like Bull- packed it yesterday and it decided to run with the Bulls- Yep broken. So poor hubby has one more thing to fix and I got to twist the laundry today. Thank goodness the dryer works

Oh Canada
This week kicks of Canada week. Tonight we are serving "Tourtiere". What is it with meat pies? I guess it is like our Hamburger. Most British influenced countries serve them in some form. Fast Food for the masses. Mine I am choosing to not add the top pastry - too much dough for us. Plus I did add some spinach. For desert we are having Canadian Molasses cookies.
We are also looking forward to the Winter Olympics starting. But tonight is all about "Lost" . Of course, I have no grand illusion that the end of the show will give us any sort of conclusion. So I just enjoy the ride.

Biggest Loser
Looosssseeerrr - I love it when Jim Carey says that!! I joined a Biggest Loser challenge with my friend who is a personal trainer. So for $30 in the kitty we get to compete. This should be fun. We have about 10 people trying to earn the title. I like that she will be giving Dietary advice for 12 weeks with only the $30 bucks. So here goes. Yesterday walked 2 miles on treadmill, strength training and stretching. Today 8 miles on the bike, strength and stretching. The hardest part is keeping the little red devil off my shoulder who is constantly screaming you want/need/desire/crave SUGAR after my meals ahhhhhhhhhhhhhhhh
Get behind me Satan!! Well anyway that is live. So I got a job. It is to win the Biggest Loser and be a Big Winner- I am full of funny quips today. Cheerio
